Summer Truffle Carpaccio is part of Tartufi Jimmy's Preserved Truffle category. These delicious slices, called "Carpaccio," are made exclusively from fresh, seasonal truffles. The internal grain and maturation guarantee the same sensation experienced when tasting fresh truffles. The sterilization process the jars undergo changes the color of the veining in Carpaccio, which is generally white in fresh truffles, to match the color of the truffle pulp.
